Cauliflower-Crust Pizza

Ingredients for cauliflower pizza crust

  • 1 head cauliflower

  • 2 eggs

  • 1/4 cup grated Parmesan Cheese

  • 1 cup grated Mozzarella Cheese

  • 1 tsp Italian seasoning

  • pinch of salt

Take the head of cauliflower and chop in food processor to the size of rice. If you do not have a food processor a cheese grader will work.

Place the chopped cauliflower in a microwave proof bowl. Microwave on high until soft, about 4-5 minutes. When cool, mix together cauliflower, eggs, Parmesan cheese, Mozzarella cheese, seasoning and salt.

Use parchment pager to line baking sheet. Make sure the lip is covered with the parchment paper. Press the "dough" into the pan, push up to the edges.

Bake at 425 degrees for 10-12 minutes. Should be golden brown.


Topping the cauliflower pizza crust

Once the crust comes out of the oven top with your favorite sauce - such as Ragu.

Sprinkle another 1/2 cup Mozzarella cheese over the pizza. Top with your choice of toppings.

  • Mushrooms

  • Spinach Leaves

  • Sliced Olives

  • Chopped Onions

  • Red Peppers

  • Turkey Pepperoni

Sprinkle with extra virgin olive oil (2 tbs) and Balsamic vinegar (1 tbs)

Bake again until cheese is bubbly, about 10 minutes. Garnish with fresh bail leaves before serving.
