Take the head of cauliflower and chop in food processor to the size of rice. If you do not have a food processor a cheese grader will work.
1/4 cup grated Parmesan Cheese
1 cup grated Mozzarella Cheese
2 eggs and a pinch of salt
mix together cauliflower, eggs, Parmesan cheese, Mozzarella cheese, seasoning and salt.
Use parchment pager to line baking sheet. Make sure the lip is covered with the parchment paper
Press the "dough" into the pan, push up to the edges. Then bake at 425 degrees for 10-12 minutes. Should be golden brown
Once the crust comes out of the oven top with your favorite sauce - such as Ragu.
Sprinkle with extra virgin olive oil (2 tbs) and Balsamic vinegar (1 tbs). Bake again until cheese is bubbly, about 10 minutes
Garnish with fresh bail leaves before serving
